Gingerbread Cookies

When you have all these Christmas cookie cutters, its hard to just make gingerbread men.

These cookies aren't the regular hard ones form the store. They're soft, delicious, adorable, and soooo easy to make!

Here's the recipe...

1 spice cake mix
2 tsp. ground ginger
2 eggs
1/3 cup oil
1/3 cup dark molasses
1/2 cup flour

Combine all ingredients. Refrigerate dough for 2 hours. Roll dough to 1/2 inch thick. Cut with cooke cutters. Bake on ungreased cookie sheet at 350 degrees for 8-10 minutes. Let cool and decorate.

I think these are best with just a touch of cream cheese frosting!

  4. There was a question about the cake mix, so just for everyone's info...
    I prefer to use the Betty Crocker spice cake mix. Its a box (about 18oz.) But I'm sure any average sized brand would work!
