Morning Glorious muffins

I love warm muffins any time of year, but there's something wonderful about warm muffins on a snowy morning. We made these the other day and ate them while watching the snow fall outside. Bliss.

These muffins are loaded with goodies: shredded carrot, coconut, apples and chopped dates (which I didn't have, so I just used raisins. The raisins work, but the dates are better).

Mmmm. That's cinnamon you see there. 

Voila! These muffins are quite sweet--almost like eating carrot cake. :)

Ingredients
3 eggs
1 cup of oil/applesauce mixture
1/2 tsp. vanilla
1/2 to 1 c. shredded carrot
1 to 1/2 c. shredded apples
3/4 c. shredded coconut
1/2 c. chopped dates, raisins or dried crans
1/2 c. chopped toasted walnuts
1 c. all-purpose flour
1 c. whole-wheat flour
3/4 c. sugar (sometimes I use 1/2 c. sugar plus some honey)
2 tsp. baking soda
2 tsp. cinnamon
1/2 tsp. salt

1. Combine the first 3 ingredients and mix well.
2. Add the carrot, apples, coconut, dates and walnuts and stir to combine.
3. Mix the remaining ingredients, then add to the wet mixture.
4. Fill muffin cups 3/4 full; bake at 350 for 35 to 40 minutes.

Enjoy with some fresh fruit. We ate ours with some seasonal grapefruit and the whole house just smelled of December to me--cinnamon and citrus!
