What's for Dinner?


Here's what we ate last week. I always share LAST week's menu so I have time to take picture, load them up, edit them, etc.; alas, this week was not meant for me to have time for much of anything! How does a week get so crammed with stuff so quick? Most of it was good busy though--trips to the doctor for well-baby check ups, playing with kids, etc. Extra fun though? Furniture shopping! Years ago when our couches were so old and ugly, I bought some nice couch covers for them (soooo worth it!), but now that the covers are thread-bare, it's time to invest in a new set. I think we found "THE SET," so happy birthday to me! (A few weeks early, but no matter).

Also, for date night this week, my husband and I finally watched that Liam Neeson film Taken. Sheesh, about scare you to death! Especially as a parent to two girls.

ANYWAY, here's the menu. I hope it can serve as some inspiration for you. :)

Monday
Hot Tuna Sandwhiches  with relish tray (We use a Southern recipe from my husband's Grandma--this one is pretty close.)

Tuesday
Roast Chicken with Roasted Parsnips and Yams

Wednesday
Chicken Salad Sandwiches (added grapes to mine) (All these sandwhiches! What can I say, I was in the mood for easy, light meals!) (used leftover chick from Tues)

Thursday
Chicken Noodle Soup (My hubby informed me that by this time in the week he was getting a bit tired of chicken....) (used leftover chick from Tues)

Friday
Quickie Marinara with Penne and broccoli

Saturday
Navajo Tacos (fry bread/scones topped with vegetarian chili and taco fixin's)

Sunday
French Onion Beef Short Ribs with side salads (green beans for the kiddos--my oldest, who is 3, still informs me that her "teeth are not big enough yet to eat lettuce." She eats all her other veggies great, so whatever...) :)

  1. Yummy Dinner plan! I love chicken salad sandwiches with grapes. I also add chopped walnuts and do an open face sandwich or put it on a salad.
