Coconut Cheese Brulee

This is my favorite "fancy snack." It's pretty hard to beat crackers and fresh fruit and cheese, unless of course you mix in some brown sugar, coconut and chopped walnuts. :) MMMMmmm!

I recently made this dish when we invited some friends-to-be over for a get-to-know you game night. Even if they didn't love hanging out with us, they'd surely come back for the good food, right? :) We'll see I suppose.
You'll want to give this recipe a try for your next girls night, game night, date night, house warming party, whatever! Go ahead, think up an excuse to make it--you'll be glad you did. :)
Coconut Cheese Brulee
1 lb. Swiss Cheese (Monterey Jack is also good, or a mixture)
½ c. brown sugar
1.2 c. shredded coconut
½ c. chopped walnuts or pecans
1 Tbsp. butter, melted
1 Tbsp. milk or cream
  1. Cut cheese into one-inch chunks. Arrange in an oven proof serving dish. Bake at 350 for about 5 minutes to soften the cheese slightly (do not melt the cheese!).
  2. Meanwhile, combine the brown sugar, coconut, nuts, butter, and milk or cream and mix well. Spread over the cheese. Broil for about 2 minutes or until the topping is bubbly and slightly browned.
  3. Serve with assorted fruits such as apples, pears, and grapes and crackers.
