I've posted this post before, a loooong time ago when we first started posting. When I made it for breakfast the other day, I thought it'd be fun to update the photos and re-share it. It's such a fun breakfast; one of my personal favorites. Who could resist a banana split for breakfast--especially if it was healthy?
My kids are split 50-50 on this breakfast. One loves it, the other hates it and the third is still on the fence--kind of picks and eats some of it. Likes it well enough to eat but not well enough to completely go crazy if you know what I mean.
As I said, I love it. Fresh fruit, protein-packed cottage cheese (that has been sweetened a bit with real maple syrup), tangy plain yogurt, and crunchy nuts. It was made with my taste buds in mind, I must admit. :)
I like how it fills me up and lasts and yet doesn't feel heavy at all--light and yummy. Just thinking about it makes me want some!
Go ahead, give it a go. I hope you and your family enjoy!
½ c. cottage cheese
¼ c. grapes, halved or 1 kiwi, diced
1 Tbsp. wheat germ (opt.)
1 Tbsp. pure maple syrup, agave nectar or honey
½ c. strawberries, sliced
1-3 Tbsp. plain yogurt mixed with 1 tsp. cinnamon
1 Tbsp. chopped nuts
1. Cut banana lengthwise and place in a shallow bowl.
2. Combine cottage cheese with grapes/kiwi wheat germ and maple syrup. Form into a “scoop” and set in the middle of the banana.
3. Top with strawberries and yogurt. Sprinkle with nuts.
